The 14th annual Beaujolais and Beyond Food & Wine Festival happens Thursday evening at Infinity Park in Glendale. It marks the arrival in the Rocky Mountain region of this year’s Beaujolais Nouveau, a popular wine that debuts in France annually on the third Thursday in November.

Jean Claude Cavalera is executive chef at the Warwick Hotel in Denver. He talks about being one of 20 chefs competing to win a prize for the dish that best compliments this year’s Beaujolais Nouveau wine.
