Colorado Family Competes in World's Championship Chili Cookoff

Blonde Brew Red Chili
by Erika Knutson

3 lbs. of beef (tender roast) cut into 1/2 inch cubes

Base Spice
3 tbs. of Gebhardt's
2tbs. cumin
½ tsp. white pepper
½ tsp. brown sugar
½ tsp. paprika
½ tsp salt
1 tsp. dehydrated onion

Finish Spice
1/ ½ tbs. of Gebhardt's
1 tbs. of New Mexico lite chili powder
1 tbs. of Mexico dark chili powder
½ tsp. San Antonio red chili powder
1 tsp. garlic powder
1 tsp. msg

1 tbs. vegetable oil

Ingredients
1 can of chicken broth, 1 can of beef broth, 1 can of tomato sauce. 1 bottled water
additions to flavor: lime juice, sea salt, tomato sauce.

Directions
Method based on a 3 hour cooking time
Brown meat in veggie oil and sprinkle with white pepper, drain the grease.
Put meat back in the pot, add all broths, water and cook for 2 hours.
In the last hour of cooking time, all of the base spice, and ½ can of tomato sauce.
In the last 30 minutes of cooking time, add all of the finish spice.

At the last 15 minutes add lime juice, salt and any other spices that may give your chili that extra KICK!


Blonde Brew Green Chili

Ingredients
3 lbs. of pork or chicken cubed
2 yellow onions
1 bulb of garlic
2 cans of chicken broth
1 can cream of chicken soup chili verde
1 large can of diced green chilies
1 lb. green chilies (New Mexico)

Spices
3 tbs. of green chili powder
2 tbs. cumin
½ tsp. white pepper
½ tsp. salt
1 tbsp. vegetable oil

Directions

Method - based on a 3 hour cooking schedule
Brown pork in veggie oil and sprinkle with white pepper.
Drain the meat from the grease and put meat in the pot.
Add the 2 cans of chicken broth, cream of chicken soup, onion, garlic, spices
Simmer for 2 hours.

Be careful, chili will stick.
Stir frequently and add bottled water as needed!

In the last 30 minutes of cooking, add green chilies, and ½ can of diced tomato.

Taste your chili and make any necessary adjustments: This can include, lime juice, additional green chili powder, salt, etc. If you want an extra KICK, add Serrano pepper!

Enjoy with tortillas!
