Gluten-free is everywhere these days, and now, if you live in Boulder County, it’s an option in school cafeterias.
It’s just the latest health-conscious addition to menus in the Boulder Valley School District. Before this came salad bars, organic dairy and locally-sourced meats.
Chef Ann Cooper, who’s known as the Renegade Lunch Lady, is head of nutrition services for the district.
Cooper is also the author of “Lunch Lessons: Changing the Way We Feed Our Children.” She spoke with Colorado Matters host Ryan Warner.
