Chile roasters in Pueblo are invited to participate in an educational forum regarding new statewide food regulations. KRCC’s Martha Perez-Sanz has more.

Nationwide outbreaks of food-borne illness such as salmonella and listeria prompted the State Board of Health to vote on new food regulations at the end of last year. Part of the new rules include increased hand washing and new inspection regulations. Some roasters expressed interest in a forum to talk about the changes.

Food Safety Inspection Program Manager Vicki Carlton at the Pueblo City-County Health Department says the session will go over specifics and answer questions.

"We want to get a good dialogue going, we want to have a good relationship, because our main concern is that they put out a safe food product."

Cooked chilies are able to support bacteria growth between 41 and 135 degrees Fahrenheit. The forum will be held Febrauary 8th at the Pueblo Health Department.
