On most prep days, Yuan Wonton chef Penelope Wong and her crew will make about 4,500 wontons of various ingredients, which are then frozen ahead of being cooked. Feb. 13, 2023.

Yuan Wonton is a hugely popular food truck in Denver, judging by how quickly anything Chef Penelope Wong puts up for preorder disappears. Now Wong is a semifinalist for a regional James Beard award. She finds out March 29 if she will be a finalist. Wong is also helping champion Mile High Asian Food Week, which starts today.

Her food truck will soon make way for a brick-and-mortar store in Denver's North Park Hill neighborhood, in a venture Yuan Wonton is undertaking with two other local businesses. She spoke with Colorado Matters and Denverite about her career, and what food means to her.
